No-Knead Bread: Steel Cut Oats


This is another of my favorite no-knead variations. I'm not sure toasting the oats makes much difference, but there it is!

No-Knead Bread: Steel Cut Oats

Ingredients
  • 3/4 cup (3 oz.) whole wheat flour
  • 1/2 cup (3 oz.) steel cut oats, toasted
  • 2 1/2 cups (10 oz.) bread flour
  • 2 teaspoons salt
  • 1/4 teaspoon instant yeast
  • 2 cups water
  • 1/4 cup honey

Directions
  1. Mix together the dry ingredients.
  2. Mix in water and honey until incorporated.
  3. Cover with plastic and let sit 12-18 hours.
  4. Fold sides in on each other, then fold in half the other direction.
  5. Cover loosely with plastic and rest for 15 minutes.
  6. Transfer to well floured towel or proofing basket. Cover with towel and let rise about 1 1/2 hours.
  7. Bake in covered La Cloche or Dutch oven preheated to 500 degrees for 30 minutes.
  8. Remove cover; reduce heat to 450 degrees and bake an additional 15 minutes.
  9. Let cool completely on rack.
