One-Ingredient Ice Cream

I saw this article when I was browsing cooking blogs.  I was immediately curious - bananas into ice cream?!?!  I didn't really believe it and then I caught a little bit of Rachel Ray.  She was making banana ice cream and once I saw it actually come together (a.k.a. saw that it was possible) I decided that I had to try this out.  It's easy...

Easy as one...

Two...

Three!

Seriously.  Step 1: Freeze banana pieces.  Step 2: Put into food processor.  Step 3: Blend in tasty ice cream.  You want to use a very ripe banana, one that you would still eat as a regular banana but almost too ripe, like you would have to think twice about it.  Slice it up into chunks and freeze 1-2 hours.  You want it to be frozen but not absolutely frozen solid.  Then process away!  It's magic!  The banana has just enough fat to turn it into a creamy treat and it takes about 10-15 seconds.  It goes from banana chunks then you keep watching, and bam!  Ice cream!  Now, it's not very hard ice cream, think soft serve.  But tasty, no added-sugar, non-dairy, soft serve!  It's pretty delicious on it's own, but I like to mix it a little extra, say PB2 or honey.  Yum!
